Ingredients serve 4
1 can yellow corn (15.5 oz)
1 can black beans rinsed (15.5 oz)
½ red pepper diced
1 cucumber cubed
2 green onions, minced
1 tbl Cool Curry Spice Blend
¼ cup of your favorite vinaigrette or 2 tbl oil and 2 tbl vinegar
salt and pepper to taste
fresh avocado, diced for garnish
Add Cool Curry Spice Blend and salt and pepper, to the vinaigrette.
Mix together corn, beans, red pepper, onion, and cucumber in a bowl and toss. Add the spiced vinaigrette to the vegetables and gently toss. Add the diced avocado before serving.
