Ingredients serve 2
2 tsp olive oil
1 tsp fresh lime or lemon juice
1 tsp lime or lemon zest
½ tsp spice blend, e.g., southwestern
¼ tsp Kosher salt
1 quite ripe avocado, halved, pit removed
¼ cup chopped cilantro
1 green onion chopped
1 garlic clove minced
1 tsp salsa verde sauce (note: you can substitute regular tomato salsa)
flaky sea salt (for serving)
Mix oil, lemon juice, zest, onion, garlic, cilantro, in a small bowl; season dressing with salt.
Score avocado half from flesh to the skin but not thru skin in 1/4 inch stripes both lengthwise and widthwise. Also, score all around the cut edge of the avocado half.
Spoon dressing over and into avocados. Drizzle 1/2 tsp salsa verde sauce over each avocado half. Sprinkle with a touch of flaky sea salt. Serve
