Southwestern Cheese Dip or Sauce

Ingredients for about 1 cup sauce


4 oz freshly grated Monterey Jack cheese (or any favorite, easily meltable cheese) about 1 packed cup
½ tsp cornstarch
½ cup evaporated milk
½ tbl Cool Southwestern Spice Blend
optional: 4 slices of pickled or fresh jalopeno pepper, chopped

Directions

Toss cheese, cornstarch, spice blend and chopped peppers if using, in a medium heatproof bowl.

Pour evaporated milk over and cook in microwave on high 1 minute.


Whisk and continue to microwave in 30-second increments, whisking in between, until melted and smooth (about 2 minutes total).


Use as a dip with corn chips or as a sauce over any cooked, canned, or roasted vegetables such as roasted green or red peppers, green beans, any canned beans, broccoli, cauliflower, squash, etc. It makes a fulfilling meal in itself.

Optional: Add a small can of diced tomatoes or a small can of peas and carrots, or a small can of bean chili to the sauce after it is smooth, and stir.

Carnivore optional: Add chopped ham slices (2), a small can of chunked chicken or tuna, or a small can of hotdog chili to sauce and stir.


Note: If you don’t have a microwave, combine ingredients as written in a medium heatproof bowl, then set over a saucepan of simmering water. Whisk the mixture occasionally until melted and smooth.
